The result of a collaboration between Père Gil Florini and the Baie des Anges publishing house, this book presents nearly 30 recipes for Niçoise cuisine, specially chosen with "winter" products. As we are convinced of the importance of the seasons in food and products, these recipes are conceived with winter products that can easily be found in the markets of the Nice region.

The author:
Gil Florini studied at the Lycée Massena and the Ecole Normale d'Instituteurs in Nice. At the age of 8, he joined the Scouts de France, where he remained until finally becoming Departmental and Diocesan Chaplain. In 1978, he entered the Major Seminary for the Diocese of Nice. Ordained priest on June 3, 1984 in Nice Cathedral. Since 2001, he has been Curé of the Saint Ambroise parish in Nice, which includes the churches of Saint Pierre d'Arène, Sacré Coeur and Saint Philippe, and Dean of Nice Centre.
President of the Institut Méditerranéen d'Art sacré et de Culture Religieuse, founded in St Paul de Vence in 1996, he works with the greatest international artists. He has been Episcopal Delegate for Culture and Diocesan Delegate for L'œuvre d'Orient. He runs a monthly newspaper, is Vice-Chairman and Managing Director of the Negresco Endowment Fund, sings and breeds horses... He is also a Chevalier de l'Ordre National du Mérite and a Médaille de la Jeunesse et des Sports.
