Mes recettes niçoises de printemps - Gil Florini
Twenty-seven recipes for springtime Niçoise cuisine chosen from Père Gil's recipes.
These include "classic" recipes such as salade niçoise and panisses, as well as lesser-known ones like beignets au "brocciu" and tian aux zucchinis, and the author's own fougasse de la Madone and trout au génépi!
There's something for everyone...
But let's let Father Gil Florini tell us about the philosophy behind this collection of recipes: "With this collection of spring recipes, we enter squarely into the regeneration of seasons and pleasures. I think it's important to choose quality, natural, seasonal products. The recipes I present are rather simple. I've prepared them all a thousand times over, so they're all "my way"... with herbs, sugar, salt, pepper, honey, olive oil and alcohol...
A good recipe is a fair recipe, one that allows you to taste just the right thing, with gourmandise..."
Editions Baie des anges.
